How would you define what "good" and what "evil" mean in Twilight?

I think evil is immoral temptation and good is resistance.

I believe there are far more evil actions than evil characters. Every single character has the capability of being good or evil, despite their nature. It's all determined on how much they resist and how much they indulge.
